CICCIO SULTANO’S CUISINE

  • It is a cuisine which mirrors the territory and the very high quality raw ingredients, personally selected by the chef. Chef Ciccio personally selects the best products from his suppliers and contacts. The meticulous selection of raw ingredients offers a creative refined cuisine, with a carefully considered combination of ingredients.
  • “You can talk about food”, Chef Ciccio often says, “when you have a good knowledge of it, of its organoleptic properties and of the results you can reach combining different spices with raw ingredients, still respecting their peculiarities”.
  • Heavily influenced by Sicily’s sea and its rugged mountain countryside, the cuisine at Duomo comes together in a truly inspirational menu. He is particularly interested in the cuisine from Ragusa Ibla, the oldest and most magnificent part of the city. An enthusiastic ambassador for his island's famously satisfying food, Chef Ciccio is known for spinning classic Sicilian ingredients—anchovies, pistachios, bottarga, Nebrodi lamb, fennel—into whimsical dishes that express both his connection to the land and his mastery of contemporary techniques.
